This soup serves about 8 people.
Calories per serving (a serving is about a cup!) - 249
This recipe is personally made by me.
1/2 cup yellow onion, sliced how ever you want it
1/2 cup red onion
1 tbsp garlic, minced
4 large carrots, sliced
1 can corn
7 medium mushrooms, sliced
3 celery sticks, sliced
1 block extra firm tofu, cut into squares
1 can diced tomatoes with basil, garlic and oregano
2 red potatoes, cubed
2 yukon gold potatoes, cubed
1 cup traditional quinoa
1.5 containers chicken broth
Spices…I added pepper, basil and garlic powder.
1. Saute onions and garlic for about 3 minutes on meduum high…be careful not to burn the garlic!
2. Add the rest of the veggies and saute for about 2 minutes.
3. Add chicken broth and spices and boil for about 5 minutes.
4. Turn down to low and let simmer for about an hour or until the veggies are tender.
And that’s it! :] i don’t have a picture for this…but it was really delicious! You can customize this recipe any way you’d like to…just make sure to adjust the calorie content.
